Low Carb Pumpkin Chip Bars

With the leaves turning red and gold (at least for those of us in the northern hemisphere) and halloween just around the corner, thoughts of pumpkins start to emerge. Right on cue Laura at Fit Chick’s Kitchen has published this recipe for low carb pumpkin chip bars…

1/3 cup coconut flour
1/3 cup almond flour
1/4 tsp sea salt
1/2 tsp baking soda
1 tbsp cinnamon
4 eggs
1 cup cooked or canned pumpkin
1/2 cup steviva blend
1/3 cup butter
3/4 cup dark chocolate chips


Preheat oven to 375 degrees.
In a large bowl combine all ingredients and mix until all lumps are gone.
Spread batter into a greased 8×8″ baking dish
Bake at 375° for 30-40 minutes
Cool and serve
Makes 16 Squares
